Head Start Nutrition Education Curriculum.

This multidisciplinary preschool nutrition education curriculum was written for use in the instruction of 3- to 5-year-olds in the National Head Start program. Introductory notes on cooking experiences for Head Start children and suggested menus for young children are followed by nine units. The curriculum incorporates a variety of teaching techniques and learning experinces which allow for flexibility and easy adaptation. Lessons are detailed enough to allow individuals with no formal teaching experience or nutrition training to present worthwhile nutrition education activities. Lessons can be easily modified to match the capabilities of nearly all preschoolers. Many lessons encourage parent involvement and are enhanced by parent participation. All lessons provide background information, guidelines for conducting the program, and lists of resources. This curriculum is self-contained; no other materials, except art supplies, food, and food preparation equipment, are needed. A list of 269 references, including preschool curricula, books for preschoolers, materials for teachers and parents, and audiovisual materials for preschoolers, teachers, and parents is appended, as is a list of sources of inexpensive nutrition education teaching aids.
