This guide is intended for use in presenting courses in viticulture and enology to prepare individuals for the following occupations: vineyard supervisor, grape grower, grape harvest worker, winemaker, cellar master, and winery worker. The guide includes descriptions of these occupations taken from the "Dictionary of Occupational Titles," the course requirements for an associate of applied science degree in viticulture and enology at Grayson County College in Texas, descriptions of the required courses, course syllabi, a brief description of the Developing a Curriculum (DACUM) process, a list of duties and tasks covered in the curriculum, performance steps involved in the tasks, performance objectives, evaluation measures, and a 14-page bibliography. As a part of the vitology curriculum, performance steps are provided for a total of 66 tasks in the following 8 duty areas: establishing the vineyard, maintaining and operating a water management system, managing the soil, managing the plant canopy, controlling pests, marketing the crop, managing crop levels and quality, and harvesting the crop. The enology curriculum for making white wine covers 83 tasks in the following 10 duty areas: coordinating the harvest schedule, preparing for the crush, receiving fresh grapes, processing grapes, fermenting the juice, clarifying the still wine, clearing the wine, packaging it, sanitizing the equipment, and performing off-season duties. The enology curriculum for making red wine covers 76 tasks in 12 similar duty areas. (MN)
